There is a touch of fall in the air...just a touch. But there is that back to school feeling as my youngest daughter is coming home today from a summer spent working in New York. She then packs up and heads back to college for her senior year.
I had to bake some yummy peanut butter cookies to warm the house with that comforting scent for her arrival! Cookies just out of the oven and they are beyond heavenly.
I've been experimenting this summer with gluten free, vegan-like cooking. I experimented with the CLEAN diet for a month and felt terrific. But, of course, a little wine and Starbucks lattes have crept back in...
In the name of healthy, yummy, special, sweet treats...I'm sharing my experimental and totally delicious recipe with you:
SPECIAL YUMMY FULL OF LOVE VEGAN PEANUT BUTTER DELIGHTS
1 Cup spelt flour
1 Cup gluten free flour (I like Bob's Red Mill)
1 teaspoon baking soda (alum free)
1 Tablespoon flax seeds
1 teaspoon sea salt (or not)
1 Cup organic, natural peanut butter (I like chunky)
1 Cup maple syrup
1/3 Cup extra virgin olive oil
2 teaspoons vanilla
1 Cup organic dark chocolate chips
Preheat oven to 350.
Mix all dry ingredients (except chips). Mix all other ingredients. Add flour to the wet ingredients and let sit for a bit then add chocolate chips.
I have one of those silicone sheets to put over the cookie sheet. Then using a large spoon drop clumps and flatten with a fork.
Cook for about 10 minutes. Cool and enjoy with a cup of peppermint tea!!! Beyond good.
